This recipe works with any type of meat drippings, even beef, ham, chicken, or the Holiday staple turkey.

Gravy is best when you use the drippings from the turkey itself. You can adapt the recipe to fit with any meat you cook, just use whatever meat drippings you have available. The measurements are approximate, if you have more drippings available you can always add a bit more gluten free flour. Unlike most wheat including gravy recipes, you do not need to brown the flour before making the gravy to improve flavor when you’re working with gluten free flour.

Ingredients
- 2 cups turkey drippings
- 2 tablespoons tapioca starch
- 1 cup cold water
- Salt to taste
Instructions
- Pour turkey drippings from your roasting pan into a small pot. If you have more than two cups, remember to increase the amount of tapioca starch by one tablespoon per additional cup of drippings.
- Put turkey drippings on stove top, on medium heat.
- Blend tapioca starch with cold water, whisk thoroughly
- Slowly add tapioca and water mixture to the drippings, and whisk constantly until gravy begins to simmer.
- Hold at simmer until the gravy begins to thicken.
- Take off heat and let cool off from the boil. Pour into gravy boat or pitcher and serve hot.
Notes
If you don’t have enough turkey drippings, you can substitute in an equal portion of butter instead.
If the gravy seems too thick, add a small amount of water, 1/4 cup at a time. If the gravy is too thin, simmer it longer to reduce the liquid.

Ways to Use Extra Gluten Free Turkey Gravy
Gravy makes a suitable accompaniment to extra turkey and mashed potatoes for a leftover-based shepherd pie like dish. Simply combine meat and gravy, place an oven safe dish and add peas or other veggies. Then, top with leftover mashed potatoes. When ready to consume, simply heat thoroughly in an oven. Can be frozen if one is turkey-ed out from the holidays.
Another tasty use of this gravy is to use to heat slices of turkey to make open faced, hot turkey sandwiches. Use your bread of choice, gluten free, or regular, and heat 1/2 cup of gravy with several slices or chunks of turkey. When the gravy and turkey begin to simmer, pour over the bread and enjoy open-faced and pipping hot.
Gravy also makes a suitable soup base, simply dilute with water and add leftover turkey and vegetables. If you like a thicker soup, add leftover mashed potatoes and dilute with less water. Would go very well with celery as one of the vegetables.
