Pickled Garlic Recipe

  • Yield: 3 pints of pickled garlic 1x


Pickled garlic is a mellow and a great addition to any pickle plate.


  • 12 heads of garlic, separated into cloves, blanched and peeled
  • 3 cups white vinegar
  • 1 cup white wine
  • 1 tablespoon sea salt
  • 2 tablespoon white sugar
  • A sprig of fresh oregano, basil or rosemary for each jar


  1. In a large saucepan bring vinegar, wine, salt, sugar to a boil
  2. Boil for one minute
  3. Remove from heat
  4. Add garlic
  5. Stir constantly for one minute
  6. Spoon garlic into prepared canning jars
  7. Cover with liquid, leaving 1/2 inch head-space
  8. Add a sprig of herbs to each jar
  9. Complete two-piece seal with prepared discs and rings
  10. Process in boiling water canner for 10 minutes
  11. Remove from canner and allow to cool at room temperature, ensuring that jars are sealed before storing.
