Description

A quick and easy pasta recipe using your pasta machine.


Ingredients

Scale
  • 1 cup of bread machine flour
  • 2 whole eggs
  • ¼ teaspoon salt
  • 1 teaspoon olive oil
  • Pasta Machine

Instructions

  1. Mix ingredients together
  2. Knead until mixture makes a smooth ball
  3. Divide into 4 portions
  4. Process through your pasta machine as per the directions on the machine
  5. Cut using the pasta cutters of your choice
  6. Toss the pasta in flour as you take it from the machine (This will keep it from sticking while you cut the rest of the pasta)
  7. Get a pot of water boiling rapidly
  8. Add the pasta
  9. Stir gently
  10. Boil for 5 min (Fresh pasta is done to al dente when it rises to the surface of the boiling water and floats on top)
  11. Pour the finished pasta into a colander

Notes

  • Perfect pasta is not mushy or starchy.  It should slightly resist your bite, but not be starchy.
