Maple Cheese blintzes with fig and goji berry sauce

Description

A delicious, healthy and fun breakfast suitable for company or special occasions.


Ingredients

Scale
  • 8 crepes prepared using the recipe above

Filling:

  • 1 ½ cups of ricotta cheese
  • 2 tablespoons organic maple syrup
  • 1 teaspoon vanilla

Sauce:

  • 6 Calimyrna figs, chopped
  • ¼ cup goji berries
  • 1 cup of water

Topping:

  • ½ cup raw walnuts, toasted briefly

Instructions

  1. Prepare the crepes according to the above method
  2. Keep crepes warm until you are ready to serve the blintzes
  3. The sauce and the filling can be prepared while you are cooking the crepes

Sauce:

  1. Add chopped figs, goji berries, and water to a small saucepan
  2. Simmer together until most of the water is absorbed by the dried fruit, about 5 minutes

Filling:

  1. Combine ricotta cheese and maple syrup together into a smooth, creamy texture

To assemble:

  1. Layout a crepe on a plate
  2. Place two tablespoons of the filling onto the top half of the crepe/blintz
  3. Roll the crepe from the top toward you in jelly-roll fashion
  4. Set it on a plate
  5. Repeat for the other crepes
  6. Top with fig-goji berry topping
  7. Sprinkle with walnuts for crunch. Serve.

Notes

  • The serving size is two cheese blintzes
