Description
A simple, chai and vanilla simple syrup to enhance winter drinks with sweetness and spice.
Ingredients

- 2 vanilla pods, scraped of seeds
- 4 tablespoons of chai tea mix
- 2 cups sugar
- 2 cups water
Instructions
- This recipe is designed to use scraped vanilla pods, such as ones used to make the vanilla sugar for this vanilla shortbread cookie recipe (coming soon).
- Break and chop up the vanilla pods into a pot with a 4 cup volume.
- Measure in chai mix (if making your own from this recipe, omit tea leaves and just use the spices)
- Add 2-2.5 cups of water and bring the spices to a low simmer.
- Simmer for 10-15 minutes. Let stand till the liquid is cool enough to handle, or until it won’t burn you as you strain it.
- Strain out the spices from the liquid, saving the liquid. Return the chai and vanilla infused water to the pot.
- Measure 2 cups of sugar into the still-warm liquid, and slowly your simple syrup to a boil. Once it reaches a boil, remove from heat and let stand till no longer rapidly boiling.
- Pour into a pint jar and refrigerate. Use 1-3 tablespoons to enhance a cup of tea, or over ice-cream, or however you wish to use it
