Coconut Milk

Ingredients

  • 1 ½ cups almost boiling water
  • 1 cup organic unsweetened coconut flakes

Instructions

  1. Pour very hot water over coconut flakes and allow to sit for 15 minutes
  2. Pour this into a food processor or blender
  3. Blend on high for 3 to 5  minutes or process in the food processor until coconut flakes are very finely chopped – like graham cracker crumbs
  4. Pour contents of blender (or processor work bowl) into a fine sieve and allow coconut milk to drip out into a jar
  5. Press the pulp with the back of a spoon to extract most of the coconut milk and coconut oil

Notes

  • You will use all the pulp plus ½ cup of coconut cream/milk in the DIY Lara Bars recipe
  • The extra ½ to ¾ cup of coconut milk can be used for something else
